Directions:

  1. Preheat the oven to 375 degrees F and line 2 baking sheets with cooking spray.

  3. Beat the peanut butter, unsalted butter, and shortening in a large bowl until it is completely smooth (Use an electric mixer for quick work)

  7. Lay out the balls on the prepared baking sheets and refrigerate for 30 minutes.
  8. Now sprinkle some of the crushed peppermint candies on top of each mound of chilled dough.
  9. Bake until the cookies are fully set for around 12 to 15 minutes
  10. Enjoy the delicious cookies with family and friends after cooling.

3. Brown Butter Thumbprints

Ingredients Used:

Unsalted butter8 tablespoons
All-purpose flour2 cups
Baking powder1/2 teaspoon
Ground cardamom1/4 teaspoon
Salt1/4 teaspoon
Superfine sugar3/4 cup
Egg1 large
Jam2/3 cup

Directions:

  1. Line 2 baking sheets with parchment paper
  2. Melt the butter in a saucepan over medium heat. Cook with continuous swirling of the pan around until the butter smells nutty. Remove it from the heat and let it cool down.
  3. Take a medium bowl, and whisk together flour, baking powder, and salt.
  4. Now in a large bowl, smoothly cream together the above prepared softened browned butter and granulated sugar until light and fluffy.
  5. Add the egg and vanilla extract and mix it well.
  6. Gently pour the dry ingredients into the wet ingredients slowly and mix them well.

  8. Gently roll the chilled dough into 1-inch balls and make an indent in the center of each ball with your thumb. Fill each indent with about ½ teaspoon of jam for a rich filling.
