- 2 Cup Baking spray with flour
- 8 oz. Unsalted Butter
- ¾ Cup Brown Sugar
- ½ Cup Granulated Sugar
- 2.5 Cup All-Purpose Flour
- ¼ Cup Unsweetened Cocoa
- 1 tbsp Instant Espresso Powder
- 1 tbsp Kosher salt
- 1 tbsp Baking soda
- 1 tbsp Ground Cinnamon
- ½ tbsp Baking powder
- ½ tbsp Ground nutmeg
- ⅛ tbsp Ground cloves
- 2 large Eggs
- ⅔ cup Buttermilk
- ½ cup Sour cream
- 1.5 tbsp Vanilla extract
- 1 tbsp Orange zest
- 1 tbsp Lemon zest
Instructions
For the Cola Syrup
- Mix cola and sugar in a medium saucepan to boil over medium-high.Stir continuously for 30 mins until it is reduced to 1 cup.
- Remove from heat and add lemon juice to it. Further reserve 1/4 cup cola syrup in a liquid measuring cup for glaze.
Cake Process
- Preheat oven to 350°F. Add butter, brown sugar, and granulated sugar along with the remaining 3/4 cup cola syrup in a saucepan with continuous stirring process.
- Cook over medium-low while stirring until the butter is melted and sugars are dissolved fully.Now remove from heat and let it cool for 5 minutes.
- Take a large bowl to add flour, cocoa, espresso powder, salt, baking soda, cinnamon, baking powder, nutmeg, and cloves to mix it perfectly.
